Brew a strong pot of dark roast coffee. Place 1/4 cup raw cane sugar in a large measuring cup. Add 1 tbsp of the fresh brewed coffee. With a small whisk, beat vigorously until the sugar is dissolved and the mixture turns into a thick crema. Stir in the contents of the coffee pot. Allow the crema to rise to the top. Pour into individual cups.
