Coffee Cinnamon Drumsticks

The entire family loves drumsticks. Add this easy and succulent Coffee Cinnamon Drumsticks recipe to your arsenal of family dinner ideas. It is perfect after school or on the weekend, when you want something different to entice the kids to spend more time at the table or when you want an easy-to-prepare meal that is big on flavor. The coffee cinnamon brine infuses the skin and meat with wholesome flavor that rivals any famous commercial chicken brand. We like to make ours with Organic French Roast. Our favorite accompanying dish is fresh, homemade potato salad, any time of year. Adjust quantities to taste and needs.

Ingredients -

4 drumsticks
1 cup strongly brewed coffee - We like to use Organic French Roast
1 cup water
1 large garlic clove, crushed
1 1/2 TBSP brown sugar
1 TBSP salt
1 cinnamon stick

Method -

In a large bowl, combine coffee, water, sugar and salt. Stir to dissolve sugar and salt completely.

Add garlic, whole cinnamon stick and drumsticks. Agitate to expose chicken to the brine thoroughly. Cover and refrigerate for 2 hours.

Position oven rack at least 4 inches from hot elements. Preheat broiler.

Discard brine and cinnamon stick. Place chicken drumsticks on a broiler pan. Broil 10 to 12 minutes, until drumsticks begin to brown. Turn and broil an additional 10 minutes.

Switch oven to 350 degrees. Move broiler pan to the middle of the oven and bake up to 15 minutes, or until meat has turned white all the way to the bone.

Our favorite way to serve: Hot, with fresh potato salad... Oh! just the thought of it!
